precautions against O157 contamination

The principle means of preventing contamination is to thoroughly wash your hands. With the approach of summer, the season in which food borne bacteria multiplies easily, it is worth reviewing the means by which infection can be prevented.

Escheria coli O157 is contracted through the mouth after coming in contact with food, water or feces from infected persons or infected domestic animals. Infection results in severe abdominal pain, intestinal bleeding and diarrhea.
The following three procedures are effective in preventing O157 infection:

- Avoid contact with food borne bacteria
Wash ingredients thoroughly, wrap foods securely for preservation and keep work surfaces clean.

- Prevent food borne bacteria from multiplying
Use the refrigerator properly and consume cooked foods promptly.

- Kill food borne bacteria
Be sure to sterilize implements and heat foods properly during preparation.
Food borne Bacteria Can Be Killed by Heating

Other forms of food borne bacteria as well as O157 can be killed when food is heated to the center to at least 75 degrees c. for at least one minute. Heating only the exterior of the food is not sufficient. It is necessary for food to be thoroughly heated to the center. Leftover food, moreover, should also be reheated to over 75 degrees c. before reserving.

1. DON'T TOUCH PREPARED FOODS
When placing cooked foods on serving dishes or in lunch boxes, be careful to use a spoon or chopsticks. In addition, wrap rice in plastic wrap first before forming it into "onigiri" (rice balls).

2. STERILIZE UTENSILS
O157 contamination can occur even when only a few bacteria are present. Assuming the possibility that the ingredients you are using have been contaminated, it is best to wash all knives, cutting boards, kitchen implements and towels thoroughly and rinse with boiling water.
